She put it on the pot while still hot. Cooling is the seal of the glass. The chutney contracts when it cools, creating a vacuum seal the jar. If you cool it first, the bottle will not get a good seal and destroy much earlier.

Seal hot. Cooling creates a vacuum, and hold better.
Seal it still hot when the bacteria can enter the food and eventually turn toxic.

Not close the glass. Place a flat side up to cool down. Once they cooled, the seal and do what you want.
