Sealing Chutney Jars I've Just Made Some Chutney. Do I Leave It To Cool Before Sealing The Jars?

I've just made some chutney. Do I leave it to cool before sealing the jars? - sealing chutney jars

I'm just a sweet fruit chutney, but I'm sure that if the seal on the jars when the chutney is still hot, or if I wait until cool.

She put it on the pot while still hot. Cooling is the seal of the glass. The chutney contracts when it cools, creating a vacuum seal the jar. If you cool it first, the bottle will not get a good seal and destroy much earlier.

Seal hot. Cooling creates a vacuum, and hold better.

Seal it still hot when the bacteria can enter the food and eventually turn toxic.

If I remember correctly, in this case to remove the hot air in the headspace ..?

maybe just the lid loose, tighten it as it cools

Not close the glass. Place a flat side up to cool down. Once they cooled, the seal and do what you want.
